LCHF on a budget?

I'm having a more difficult time than expected sticking to a budget while eating low carb. It wouldn't be a problem if I didn't have to include household expenses like laundry and cleaning and pet supplies in with the food budget but I do so it's creating some obstacles. It's hard for a girl who never had to really stick to a very strict budget in the past. Sure I've budgeted and we've paid business loans and made other things a priority over food... but this is the strictest budget I've ever had and It's giving me a frigging headache.

I've already added soaked/fermented oatmeal and potatoes back into our grocery list, for the nerd mostly, to help bulk out his meals, as we don't want my progress to fall by the wayside and he's already in maintenance mode and not as sensitive to those starches as with bread/pasta. Still, it's hard to avoid the fact that grains and starches are cheap!

I'm thinking to eat more kefir and less pricy stuff and to instead of having fish 3x week for lunch, to have it twice and focus more on sardines and mackerel than salmon. There is a lot of tweaking to be done but dammit i'm determined to make this work! The first thing to go will be cream. at €7 per jar I can't justify the indulgence which means no more coffee as well *shrugs* maybe just on sundays ;)

The baked soaked/fermented oatmeal is a huge hit with the nerd, it's cheap, freezes well and bulks out his meals so he's full and happy and energetic. The original recipe is over here but I'll do a post on in when I make the next batch the sunday after this coming sunday.

Stress makes weight loss impossible, I really need to chill the eff out and stop worrying about this so much. Things will fall into place as they tend to do. Now if I could just find a job that actually made me WANT to go to work.

I remember when I had to limit myself to cans of tomatoes and pasta. Garlic was my luxury... good time, goo... wait, they were shit!

Yes they are shit times!! without a doubt... it's hard to get round the fact that 2 days meals for 2 people of organic whole grain spelt spaghetti with tomato sauce and vegetables = €4.70. 2 days meals for 2 people beef mince + vegetables + tomato sauce €9.88 .

sardines are €1.20/can, eggs are €.22/each (for now, the price fluctuates) raw milk is €.80/litre so that's where i'll be bulking out our meals i think. sardines, eggs and milk... i have to say the pasta is temptingly cheap but it really makes me feel bleh'hey. maybe some baked beans or potato once in a while... will figure things out, hopefully :)
