Oatmeal for oatmeal haters

This makes enough oatmeal squares for the Nerd to take in his lunchbox for 2 working weeks, I cut it into 12 squares once cooled and freeze in wax paper to whip one out for his lunchbox each evening before heading to bed. This really is delicious and I abhor oatmeal, porridge, anything of this consistency.

For 24+ hr soaking:

2.5C oats + 1 heaping Tablespoon whole wheat spelt flour, mix



1.75C kefir, buttermilk or 1 TBSP whey/lemonjuice/vinegar in water -- I used homemade kefir as there's always a ton of it in the fridge



Mix and cover.



24+hrs later, you have a poofy, alcoholic smelling soaked oats ready to be mixed! Preheat the oven to 175 celsius



gently melt 0.5c coconut oil and 0.25c honey/maplesyrup



add 0.5tsp salt, 2tsp cinnamon, 2tsp vanilla extract to oats, mix.



whisk in 4 eggs



Then pour over the melted oil/honey and add:

3 small chopped apples, 1C currants



Pour into greased pyrex, bake 30 min till set.



Revel in the wonderful aroma and wait till completely cool before cutting... last time I didn't wait and it began to fall apart.



Helps bulk out his lunchbox and save money in the process! win win! I don't really eat much and won't till weight maintenance time but have tried a couple small pieces and it's absolutely delicious... and I despise porridge!
